Fruit cake will be all most all favorite Cake. Kiwi, strawberry , pomegranate,cherries, apple with all these healthy fruits this fruit cake is made.
If we talk about cake then no doubt fruit cake will be all most all favorite Cake. Kiwi, strawberry , pomegranate,cherries, apple combination of all these healthy fruits this fruit cake is made. Mainly most of fruits cake is made up of dry nuts and dry fruits but this cake is made up of natural real fresh fruits and wheat flour instead of maida which is more healthy then other cake.
Eggless Wheat Flour Fruit Cake Ingredients For Sponge:
1+1/2 cup flour
3/4 cup powdered sugar
1/4 cup oil
1tsp baking powder
1/2 tap baking soda
1 tsp vanilla essence
Neutral gel Corn syrup
Whipping Cream :
I made from 5 days fresh malai( take chilled malai and beat from electric blender drain water and add icing sugar and essence and colour according yr choice)
Icing Sugar :
I made at home by taking granulated sugar 1 cup and cornstarch1 TSP.Grind for one min and mix well.Again grind for a min and stir well.Repeat this process for 5 mins .Now sieve .Icing sugar ready
At home I made actually it is to bring glaze ( shine)in fruits for decoration. 1 cup sugar 1/2 cup, water, Lemon with peelhalf Pinch of salt In a heavy bottom pan add sugar water salt and mix well.Heat it on low flame.Dont do flame high otherwise colour will change.Stir continuously until sugar melts now add lemonhalf in mix .Heat the mix for 7 mins and cool it .After cooling it will thick and shine it’s ready .

Wheat Flour Fruit Cake Recipe:
- Add powered sugar oiling a bowl mix well,add milk and again mix well Beat for 2-3 mins.
- Sieve maida ,baking powder, baking soda in oil sugar mix ,add essence also as per yr choice ,add milk and mix well .
- Gradually add milk and make batter of pouring consistency.
- Pour the batter in greased tin and bake it.
- After cooling demould it cut in 2 or 3 slices Add fresh chopped fruits cherries ( I used homemade cherries from watermelon)and sugar in a pan and cook on low flame until sugar melts.
- Add1 tbsp of water Switch off flame .
- Sieve fresh fruits water and keep aside fresh fruits water and fruits aside separately for later use For glaze- Add 1 tbsp waterin 1 tbsp corn syrup.Micro for 10sec.
- Mix and dip chopped sliced fruits in glaze keep aside.
- Soak each cut slice of cake with fresh fruits water which we sieved and kept before .
- Now apply whipping cream(I used homemade cream) sandwich cooked fruits and spread and again cover the fruit layer with cream.
- Repeat with all 3 slices.
- Now finally cover cake nicely from all sides with cream smooth it stick glazed fruit slices on side On top I decoration with my Parley G rose biscuit which recipe I posted in my earlier post and some glazed thin sliced apple and some sprinkles Healthy fruit cake is ready.
- Friends I used icing sugar ,whipping cream sugar syrup corn syrup fresh fruits water for soaking fruits decoration with biscuits flower and most important I used atta in place of maida.
